A sampling of the rotating lineup includes thin-sliced venison with salsa Jalisco and blue corn. Additionally, one of the most interesting dishes is the Gulf fish ceviche —when it’s gone, it’s gone. This Asian twist on traditional ceviche comes with a pop of sishitos and satsuma mandarins—buen provecho!

Obsessed with fermentation-based dishes such as in-house crafted pickles with fennel salami, the creativity is out there. Take, for example, ice cream topped with toasted almond, “choco- cookie” crumbs, and—bay leaf whipped cream? We’re bewildered too, however, it’s deliciously different.
